2/3 cup (175ml / 106g) cooked ziti
1/4 cup (60ml) lite tomato sauce
1/2 cup (125ml) part-skim ricotta cheese
1/2 tomato, diced
2oz (56g) part-skim
Mozzarella cheese
Nonfat cooking spray


Preparation
Cover skillet with nonfat cooking spray; heat on average flame. Add onion, garlic and carrots to skillet and saut it for 1-2 minutes or until onions begin to light brown or soften. Put in mushrooms, zucchini and garlic powder, and saut it for 2 minutes. Put spinach and cook until soft. Remove vegetables from heat and keep sideways. In large mixing bowl, join ziti, ricotta cheese, tomato sauce and vegetable mixture. Do cover casserole dish with nonfat cooking spray. Transfer ziti mixture into casserole and top with diced tomato. Cover up and bake in 350°F (180°C) oven for 20 minutes. Take out from oven and top with mozzarella cheese. Bake, uncovered, 10 minutes, or until cheese is melted.


Serving size: 1 Cup (250 ML)
